Mole de Olla
A classic Mexican beef-and-chile stew with a bright, charred tomato-chile broth, tender beef shank, corn, and calabacita. Hearty, fragrant, and perfect with warm tortillas.
Ingredients
- 2 lb beef shank
- 8 tomatoes
- 1 onion for the soup plus extra chopped onion for topping
- 3 cloves garlic
- 1 bunch cilantro plus extra for topping
- 4 dried guajillo chiles
- 4 dried puya chiles
- 1–2 dried árbol chiles, to taste
- Salt to taste
- 2 ears corn, each cut into 3 pieces
- 1 small calabacita mexicana, chopped
- Water for boiling the beef
- Warm tortillas for serving
